YOGURT STONEFRUIT GINGER SAVORY SALAD

Here is a great savory salad that is perfect for summertime!

1 cup diced red onions
1/4 cup diced ginger
3 pluots
2 white peaches
2 yellow peaches
3-4 tbsp plain full-fat yogurt
1/4 cup chopped mint
2 tbsp butter
salt
pepper


1. Saute' 1 cup diced red onion and 1/4 cup diced ginger in 2 tbsp butter over medium heat. Liberally salt and pepper.

2. While ginger and onions are cooking; pit 3 pluots, 2 white peaches and 2 yellow peaches and cut them into bite size pieces.

3. When onions soften, combine them in a bowl with the fruit. Add yogurt and top with chopped mint.
