STONEFRUIT CHUTNEY

This is a great chutney to serve with grilled meat, especially pork.

2 white peaches
2 yellow peaches
1 pluot
1/2 cup diced red onion
1/4 cup diced fresh ginger
star anise
coriander
fennel seeds
salt
pepper

1. Take a four finger pinch of star anise, coriander and fennel seeds. Toast spices in a cast iron skillet over medium heat for 3-4 minutes (until fragrant). Transfer toasted spices to coffee/spice grinder and whir to a fine powder.

2. Melt 1 tbsp butter and 1 tbsp olive oil over medium heat. Saute' 1/2 cup diced onion and 1/4 cup diced ginger until softened, salt and pepper liberally.

3. Roughly chop 2 white peaches, 2 yellow peaches and 1 pluot, add to onion mixture and cook for an additional 5-10 minutes. Enjoy!
